Obsessed with colored denim

I know people are getting sick of this trend, but I love a colored skinny pant. I’m short, and I think the skinny crop looks best on petite people. I don’t have the guts to pair it with something exciting, I’ll probably stick to mixing it with neutrals, like a cream, white, or black top.

What do you guys think, hot or not?

In honor of the red-themed holiday, here’s a delicious red velvet cupcake recipe from BakingBites.com. Even if you’re planning on going out to dinner, these cupcakes would be a great dessert/nightcap to come home to! Hope you enjoy!

Red Velvet Cupcakes, from BakingBites.com

 

Red Velvet Cupcakes
1 1/8 cups sifted cake flour (10 tbsp)
1 tbsp cocoa powder
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3/4 cups sugar
1/4 cup butter, softened
1 egg
1/2 cup buttermilk
1 1/2 tsp red food coloring
1/2 tsp apple cider vinegar
1 tsp vanilla extract

Preheat oven to 350F. Grease cupcake tins or line with paper liners.
In a medium bowl, sift together cake flour, cocoa, baking powder, baking soda and salt. In a small bowl, whisk together buttermilk, food coloring, vinegar and vanilla extract.
In a large bowl, cream together butter and sugar. Add in egg and beat until smooth. Add dry ingredients in 4 additions, alternating with 3 additions of the buttermilk mixture, scraping the sides of the bowl as necessary. Stir until just combined.
Spoon batter into prepared cupcake tins. Fill them 2/3 to 3/4 full, which will create nice, rounded tops.
Bake mini cupcakes for 15 minutes and regular cupcake for 20-22 minutes, until a toothpick comes out clean.

Yield: 7 large and 12 mini cupcakes, with more than enough frosting to top each one thickly (or 12 full-sized cupcakes!)

Mascarpone frosting
8 oz mascarpone cheese, room temperature
2 tbsp butter, room temperature
2 tsp vanilla paste (extract is fine)
1 tbsp milk
1 1/4 cups confectioners sugar

Beat together mascarpone and butter until well combined. Beat in vanilla and milk. Add in confectioners sugar, scraping down the bowl as you go. When it has all been incorporated, beat on high speed for 1-2 minutes, until icing is smooth.

NJ Diner “Disco Fries” – Cheese and Gravy Covered Fries

You know how people say that New Jersey is famous for its diners? I’m not so sure diners are the best around here, but there is one thing that I crave like crazy. That is a delicious batch of disco fries! They are basically crispy fries covered with cheese and dark gravy.

When I was young, my friends and I used to do a little drinking, and have a sober person drive us to the diner for late night munchies. It was pretty much the only thing open in our town after 8 pm, so it was worth the trip.

In spirit of the Super Bowl, and going all out with the fatty greasy foods, I tried to make my version of those delicious artery-clogging fries.

Disco Fries (Cheese & Gravy Fries)

Very important ingredient – you need to find “seasoned” french fries. Whether you make them homemade, or buy frozen, they need to be seasoned. I baked them in the oven at 425 until they are browned and crispy.

Pull the fries out, put on cheddar or yellow American cheese (even Kraft singles will work here)

Use a beef gravy, you can make this or buy this in the carton. I used Wegman’s brand culinary beef gravy, it comes in a regular size and a small size container, the small size is perfect for these fries.

Pour the gravy on top of the fries and through the sheet pan back in the oven until the cheese is melted and the gravy is nice and warm! Gobble them up right away, they are disgusting cold or reheated, hahah.

Enjoy! Make sure you don’t skip the gym the next day….

Unique Cabinet Knobs

My husband and I have two new pieces of DIY furniture projects that we’re looking for knobs for. And seriously, it’s taken me 6 months. I can’t find ANYTHING I like. Just want something different, that still works on classic furniture pieces.

Here are some creative ones I’ve found online – but when I need 8 for the desk, it can add up to be pretty pricey.

Carpe Diem Knob

Ultimately, we ended up buying these “vintage” glass knobs from a seller on Amazon. Partly because they were relatively cheap, and partly because I’m a prime member and they would get here quickly! I like keeping things neutral on my desk.  The cabinets and counter top are separate pieces, so it can be used for anything in the future.
